Better known for its use with trout, cod fish or haddock we test the classic beer-batter recipe on walleye, or pickerel depending where you live. Whatever you call it, the end result is the same, beer-battered walleye is simply delicious. Walleye is already one of the best tasting fish in Canada, add a classic beer-battered taste and the final result will have you coming back for more again and again. Ingredients
- Oil, for deep-frying
- 3 cups of flour
- ½ cup of flour
- 1 1/2 tsp salt
- 1/2 tsp cayenne pepper (Add more want a stronger spice)
- 2 standard bottles of beer
- 2-3 lbs walleye fillets
- Pepper
Preparation
- Pour oil in deep-fryer and preheat to 370ºF. Mix 3 cups flour, salt and cayenne pepper in bowl, then whisk in beer until smooth in consistency.
- Place ½ cup of flour on plate.
- Pat walleye fillets dry with paper towel then cover in flour, shaking off excess. Dip each fillet one by one into batter, and then gently place in hot oil.
- Deep-fry until golden brown, turning once. Use slotted spoon to transfer cooked walleye fillets to a paper towel-lined plate.
- Sprinkle as desired with salt and pepper.
